There’s just something about waking up to a warm breeze and bright sunshine that makes a Monday morning far more bearable, right? This weekend was exactly what the doctor ordered. I saw a great girly movie (Something Borrowed) with my girlfriends, I enjoyed the lovely weather in the “country” at my parents. I was able to satisfy my insane need to bake for others by baking the perfect Birthday/Mothers Day cake. I combined recipes from Smitten Kitchen and The Cupcakeologist. My parent’s were out at a party so I was left to make a huge mess in their kitchen while under the supervision of both my Grandmothers.
Two hours later, after much sifting and beating, I had two delicious yellow cake layers! Yesterday morning I made the chocolate buttercream frosting and decorated the cake with crushed M&M’s. I must admit, this cake tasted so much better than any boxed yellow cake I’ve ever had!!!! The frosting called for unsweetened dark chocolate so it had the perfect bittersweet taste!
Please excuse the crappy Blackberry photo…I will upload legit pictures later!
My family knows that when it comes to desserts I tend to go overboard and this huge cake was no different. But, I poured a lot of love into it and I hope everyone enjoyed eating it as much as I enjoyed making it!
